Cheeses Esperanza del Castillo:
  Flavour and Tradition.

Surrounded by vineyards, fallows and oak groves, is the small village of Pulgar, situated in the mountains of Toledo, in the region of La Mancha.

The ancient cheese-making tradition of this small village of hardly 1,200 inhabitants has made it famous in far-reaching places thanks to its excellent cheeses. Esperanza del Castillo's cheeses have been produced since 1952, claiming to have one of the best cheese-making traditions of the area.

We can distinguish three varieties of Manchego cheese:

Old Manchego D.O., elaborated with 100 % of pasteurized milk from Manchega sheep, with a maturation from 10 to 12 months. Pieces of approximately 3 kilos.
Mature Manchego D.O., elaborated with 100 % of pasteurized milk from Manchega sheep, with a maturation from 6 to 7 months. Pieces of approximately 3 kilos.
Young Manchego D.O., elaborated with 100 % of pasteurized milk from Manchega sheep, with a maturation of 3 months. Pieces of approximately 3,2 kilos.
