Cheeses Esperanza del Castillo:
Surrounded by vineyards, fallows and
oak groves, is the small village of Pulgar, situated
in the mountains of Toledo, in the region of La Mancha.
The ancient cheese-making tradition
of this small village of hardly 1,200 inhabitants has
made it famous in far-reaching places thanks to its
excellent cheeses. Esperanza del Castillo's cheeses
have been produced since 1952, claiming to have one
of the best cheese-making traditions of the area.
We can distinguish three varieties
of Manchego cheese:

Old Manchego D.O., elaborated
with 100 % of pasteurized milk from Manchega sheep,
with a maturation from 10 to 12 months. Pieces of
approximately 3 kilos. |

Mature Manchego D.O., elaborated
with 100 % of pasteurized milk from Manchega sheep,
with a maturation from 6 to 7 months. Pieces of
approximately 3 kilos. |
|
Young Manchego D.O., elaborated with 100 % of
pasteurized milk from Manchega sheep, with a maturation
of 3 months. Pieces of approximately 3,2 kilos. |
