The anchovy is
a small fish, relatively long, of firmly packed body,
silvery stomach and with an intense green or greyish
blue back.
Considered as one of the best known
blue fishes, it is very healthy from a nutritional point
of view. Rich in proteins (which have the faculty to decrease
fat in the blood, mainly cholesterol) and in fats –
it contains 12 % of highly unsaturated fats, with all
the advantages of blue fishes, its meat contains iron,
sodium, some phosphor, calcium and vitamins A and B
